“E. Wales Hospitality began because we felt a desire to bring restaurant quality food and custom menu designs to the Maine wedding scene.” -Liz

Both Liz and Will come from over 20 years of restaurant experience. Their combined front and back of house skills, attention to design, and small details elevate event dining. Making special occasions memorable, unique and sophisticated.

Liz is a native Mainer who knew she was destined for the hospitality industry. She was one of the original owners of Petite Jacqueline before opening her own restaurant, the Blue Spoon, with her husband Will. The Blue Spoon was located on Munjoy Hill, serving up french bistro inspired dishes to the community. From the restaurant they started Blue Spoon Catering which grew into E. Wales hospitality. The name E. Wales stems from generations of matriarchal Wales in the Mid-Coast area. Edna Wales, Liz’s great grandmother purchased the original Wales home in Northport Maine. Liz, Elizabeth Wales Koenigsberg is the third E. Wales in her family. Heritage that ties her to the Mid-Coast has brought her back to its beautiful shores to continue the legacy of the Wales family. Expanding from a catering company to a more inclusive hospitality company, offering event planning and coordination services in addition to exceptional catering.
